World Famous Corn Dip

The Recipe:

Total Time: 15 minutes

Ingredients:

  • 3/4 cup sour cream

  • 3/4 cup mayonnaise

  • 1 cup red onion (approximately 1/4 of a large onion)

  • 2 Tbs jalapeño (approximately 1/2 of a large jalapeño)

  • 2 cans whole corn (15 oz)

  • 1 cup cheddar cheese

  • 1/4 tsp cayenne pepper

  • 1/4 tsp garlic powder

Directions:

Step 1: combine the sour cream and mayonnaise in a large bowl.

Step 2: dice the red onion and mince the jalapeño. add to the bowl.

Step 3: strain the two cans of corn using a colander. make sure to shake the excess water out, so it doesn’t ruin the dip’s consistency.

Step 4: add the strained corn and the cheddar cheese into the bowl. mix together.

Step 5: season with cayenne and garlic powder to serve.

Laura’s Tips:

  • Liquid vs Dry Measuring cup

    • There is a difference between a liquid and dry measuring cup. A dry measuring cup should be used for anything that can’t self-level. Everything in this dish needs to be measured with a dry measuring cup. Add the ingredient to the cup, and use a straight edge to scoop off the excess.

  • This dish is best served with Fritos Scoops.

  • Refrigerate before serving to guests if there is a gap between preparing and serving.

  • I like to use one can of white and one can of yellow corn to add a variety of color to the dish, but it is not necessary.

  • I personally prefer to use Hellman’s Plant Based Mayo, rather than regular mayonnaise.

You might be asking world famous? Really? And I’m here to tell you yes— absolutely.

I was first introduced to corn dip at a get together in high school and I noticed that it was a hit. At the time, I was living in Germany and since then, I have moved around and only improved on the recipe (at least to my personal taste). I have made it for various group functions and it always gets requested again and again.
